The St. Regis Bangkok invites guests to embark on a culinary journey with “The Long Way Home” set menu crafted by our new award-winning Executive Sous Chef Brian Rodriguez, and presented at VIU restaurant from October 20 until December 1, 2023
Reflecting his personal journey that ultimately led him to the Best Address in Bangkok, the tasting menu comprises five exquisite courses, inspired by destinations where the Italian-Peruvian chef has lived, including the UAE, Australia, his native Italy, Austria, and finally Thailand.
The gastronomic experience commences with a Black Garlic Hummus Tart, a nod to Middle Eastern flavours. This is followed by the second course, combining elements of Beetroot, Fig, Blue Cheese Mousse, and Salty Granola, paying tribute to the culinary diversity Chef Brian encountered during his time in Australia. Building on his Italian and European heritage, the subsequent courses include Burrata paired with Candied Cherry Tomatoes, Basil Emulsion and Basil Caviar, followed by a choice of either a succulent Lobster Tail or a tender Wagyu Beef Striploin for the main course, served with an Elderflower Jus, Baby Carrots, and Celeriac Gratin. Concluding this remarkable journey is a dessert of Local Honey and Thai Basil Panna Cotta, accompanied by Lemongrass and Matcha Gateaux, Thai Tea Ice Cream, and a Raspberry Ginger Sauce—a delightful homage to Chef Brian’s new home in Thailand.
Over his decade-long experience in five-star hotels and notable establishments, Chef Brian has honed his appreciation for local produce, along with an international culinary palate, developing an artistic sense and impeccable attention to the fine detail. Building on his Italian and European culinary roots, he is passionate in using local ingredients to add different perspectives and connect classic recipes with his chosen destination of residence. His personal experiences, including locations where he lived and chefs whom he worked with, are the main inspiration of his culinary creations
The 5-course “The Long Way Home” Set Menu at VIU is available for lunch from 12:00 noon to 3:30 PM except Sundays and dinner from 6:00 PM to 10:00 PM except Fridays and Saturdays for THB 2,150++ per person from October 20 – December 1, 2023.
