Inspired by the Duchess of Bedford, who enjoyed gathering friends over a cup of tea, bread and butter to stave off hunger between lunch and late dinner, the afternoon tea ritual was later embraced by Mrs. Caroline Astor, mother of The St. Regis’s founder. Mrs. Astor adopted this tradition at The St. Regis New York as an opportunity to host gatherings with closest friends, making the afternoon tea a treasured occasion, leading to what is now a hallmark experience at every The St. Regis hotel.
For the new afternoon tea experience, Executive Pastry Chef Nuntida reimagines classic French desserts with innovative twists while preserving their original flavors, such as the delightful Lemon Tart, re-envisioned as a meringue-topped sandwich. The Apple Tarte Tatin is presented in a small tart with a Sablé Breton base and a luscious apple-caramel blend, while the Fresh Fruit Macaron is a refreshing concoction of mixed berries and lychee. Continue with the Paris Brest, filled with hazelnut mousseline and dipped in milk chocolate, and the Citrus Fraisier Cake takes the shape of a strawberry roll adorned in strawberry and yuzu chocolate. Completing the sweet selections are Orange Scones, served with fruit jams, cream cheese, and whipped cream, alongside our refined The St. Regis Exclusive Blend tea to enhance the classic taste.
The savory portion of the menu, designed by Executive Sous Chef Matteo and his skilled team, features refined classics with a modern aesthetic, such as the Ginger Marinated Salmon on Toasted Brioche Bread, a refreshing take on smoked salmon. The Pumpkin Choux is filled with a rich foie gras mousse and topped with strawberry jam, and similarly creating a delightful contrast is the Fresh Burrata and Tomato Tart, made with local fresh cheese and garnished with basil pearls. The Yuzu Infused Tuna Tartar on a Sesame Bun introduces an Asian flair, while the vibrant Tomato and Orange Gazpacho offers a fresh, acidic burst to the experience.
