Executive Chef Carlo Valenziano has designed classic and contemporary dishes to evoke gastronomic memories, with bracing flavours of coastal Italy. Chef Carlo’s inspiration comes from the rich heritage of Italian cuisine combined with his experiences from exciting trips in many cities in Italy – from Piedmont, Umbria, Tuscany, Lazio, Liguria, Veneto, Puglia, Naples and Sicily. The stories hidden behind them reflect his belief that ‘Life is food’ and that ‘Celebrating every day with the best food is life.’

The story begins with divine selections of appetisers featuring ‘Torta di Pomodoro e Burrata from Puglia’ – S. Marzano and cherry tomato pie, fresh burrata cheese, tomato molasses and fresh basil; ‘Carpaccio di Roast Beef, Funghi e Bagna Cauda’ – sliced roast beef, seasonal mushroom compote, Piedmont garlic and anchovy sauce; and ‘Prosciutto e Fichi from Lazio’ – 20-month Galloni Parma ham, fresh figs and mascarpone cheese, served on an olive oil flatbread.

The pasta section embraces everyone’s favourite homemade fresh pasta dishes of ‘Strangozzi al Tartufo from Umbria’ – black summer truffle and pecorino cheese; and ‘Agnolotti al Brasato, Nocciole, Uva al Vincotto from Piedmont’ – braised beef-stuffed ravioli, beef jus and hazelnuts, which cannot be missed.

Chef Carlo’s main-course specialities include a tempting selection of ‘Ricciola alla Ligure from Liguria’ – pan-fried hamachi fillet, taggiasca olives, pine nuts, sundried tomatoes and potato mousseline; and ‘Calamari in Zimino from Tuscany’ – stir-fried squid, Swiss chard, squid gravy and garlic; and more.

This fascinating story around the Italian region ends with a selection of delicious desserts, featuring the famous tiramisu from Veneto – Friuli; Neapolitan sponge cake with rhum, vanilla whipped cream and fresh strawberries; and panna cotta in three different chocolate
intensities, served with pistachio biscotti from Piedmont; while each carefully crafted dish tells its own story and awaits for gourmands to experience it.

The ‘Stories of Italy’ exclusive à la carte menu is price from THB 290++ and three-course dining set menu is priced from THB 999++ per person and available daily for lunch and dinner from 12:00 noon to 20:00 hrs from 11 September 2021 until 30 November 2021.
Wine pairings are also available.

ALATi’s new Mediterranean à la carte menu inspired by traditional recipes, ingredients and contemporary cooking techniques of countries that surround the Mediterranean Sea, such as Italy, Spain, France and Turkey, is also available daily from 12:00 noon to 20:00
hrs. The Mediterranean wine list is also available by glass and bottle.
