Every month at Red Sky, the culinary team led by Chef Christian Ham switches things up-with an updated tasting menu curated to highlight some of the world’s finest in-season produce, and this month, the October Seasonal Menu at Red Sky, the focus turns to the unique, earthy flavours of the Black Autumn Truffle (Tuber Uncinatum Chatin), which when used sparingly, can turn already delicious pasta, rice, and meat dishes into something truly spectacular.

Another highlight is the Glacier 51 Toothfish, which hits the perfect balance of flavour and texture. Thanks to its high-fat content and delicately flavoured, snow-white flakes of meat, guests are treated to a fresh, sweet taste with hints of umami – which is why it’s sometimes likened to wagyu beef. In-season Foie gras is featured on the menu, one of the world’s most luxurious ingredients paired with the honey-like sweetness of figs. This sweet and savoury mix helps to bring out the full flavour and aroma of the produce, with each mouthful of the high quality foie gras providing a culinary experience not to forget.

Red Sky is a European fare delight in unobstructed views of the Bangkok skyline from the 55th floor, while you savour, Chef Christian Ham’s European creations and complete the dining experience with a glass of fine wine from an extensive wine cellar or an inventive cocktail curated by a talented mixologist.

Chef Christian Ham is a French national and has more than 20 years of experience in leading restaurants including L’Atelier Joel Robuchon in Hong Kong, Taillevent in Paris and Le Crocodile in Strasbourg. Prior to joining Centara Grand at CentralWorld, he was a Chef Instructor at Cordon Bleu in Bangkok, Thailand and Shanghai, China.
